Lately I’ve been pinning the shit out of new recipes ideas for meals on Pinterest. This year I’ve decided to add a new section to the ol’ blog called Tried and True. In this little corner of the site I will share reviews and a quick pic or two of recipes developed by other kickass bloggers or chefs. Some things are just too good to keep all to yourself.
I recently created a new board on Pinterest called Roast a Bowl and ever since I’ve been on a seriously devout, healthy and hearty bowl kick. The first recipe I am posting is a Warm + Roasted Winter Salad Bowl by Oh She Glows. This recipe is packed with all of the hearty goodness I’ve been searching for in my Pinterest conquests. The creamy yukon gold potatoes and green beans roast up deliciously together. When laid on a bed of hearty quinoa and topped with all kinds of tasty green things, it transforms into a hearty healthy meal packed with flavor and texture. I, of course, added a poached egg on top because I’ve recently perfected my technique and can’t get enough of those creamy, rich, and runny yolks. They honestly enhance everything you top them with. I made a few minor changes to this recipe based on what I had on hand but I gotta say this is a new go-to for me.
Huge props to Angela over at Oh She Glows for developing this super satisfying recipe. I look forward to testing out more of her healthy and colorful plant based recipes.
