Description

This rustic and hearty Cottage Cheese Tzatziki Toast has all of the freshness of traditional Tzatziki sauce but with the protein power of cottage cheese and a sprinkle of feta cheese. Toasty slabs of sourdough are topped in a simple mix of creamy cottage cheese, zesty lemon, herby fresh dill, earthy garlic, olive oil, salt and pepper. It's topped with cucumber hunks, feta crumbles, even more dill and a good glug of olive oil. This easy cottage cheese toast recipe can eat like a meal or serve as a satisfying snack any time of day.


Ingredients

  • 2 thick cut slices of sourdough bread
  • 1 cup Persian or English cucumber, sliced
  • 1 cup Real California Milk cottage cheese
  • 1/3 cup Real California Milk Feta cheese
  • 1/2 of 1 medium lemon, zested and juiced
  • 2 tablespoons olive oil
  • 1 tablespoons fresh dill, chopped (or 1 teaspoon dried dill weed)
  • 1 garlic clove, minced
  • salt and pepper

Instructions

Start by toasting your bread to your desired levels of toastiness.

While the bread toasts, combine the cottage cheese, lemon, 1 tablespoon olive oil, most of the dill (reserving some for garnish), the fresh lemon zest and juice, garlic, salt and pepper in a medium bowl. Stir together.

Top the toasted bread with the cottage cheese tzatziki mix. Then sprinkle on the feta and top with cucumbers, remaining dill, a drizzle of olive oil and more salt and pepper to taste. Enjoy!

Notes

You can make the Cottage Cheese Tzatziki ahead and store in the refrigerator for 2-3 days. It will develop more flavor as it sits in the fridge.

Alternatively top with other veggies like fresh tomatoes, olives or greens.
