Description
Hearty muesli, protein packed almond butter, omega rich flaxseed meal, honey & maple syrup combine forces in these energy boosting balls with a crunchy almond exterior.

- 2 cups Bob's Red Mill Old Country Style Muesli
- 3/4 cup slivered almonds
- 1 cup almond butter (*or other preferred nut butter)
- 1/2 cup honey
- 1/2 cup flaxseed meal
- 2 tablespoons maple syrup
Instructions
- Preheat oven to 350°F. Spread the muesli in an even layer on a baking sheet and the almonds in an even layer on a second baking sheet. Toast for about 8 minutes until everything is golden and gives off a nutty aroma. Set aside and allow to cool.
- Roughly chop the cooled raw almonds and place in a shallow bowl for rolling.
- In a large mixing bowl, stir together the nut butter, honey, flaxseed meal and maple syrup until blended. Stir in the cooled muesli and mix until blended.
- Using a 2 TB sized cookie scoop, form balls. Roll in hands to smooth out the balls and then roll each ball in the chopped almonds.
- Return to the lined baking sheet. Chill for at least 30 minutes and keep fresh in the refrigerator for up to 10 days.
