Description

Hearty muesli, protein packed almond butter, omega rich flaxseed meal, honey & maple syrup combine forces in these energy boosting balls with a crunchy almond exterior.


Ingredients

  • 2 cups Bob's Red Mill Old Country Style Muesli
  • 3/4 cup slivered almonds
  • 1 cup almond butter (*or other preferred nut butter)
  • 1/2 cup honey
  • 1/2 cup flaxseed meal
  • 2 tablespoons maple syrup

Instructions

  1. Preheat oven to 350Β°F. Spread the muesli in an even layer on a baking sheet and the almonds in an even layer on a second baking sheet. Toast for about 8 minutes until everything is golden and gives off a nutty aroma. Set aside and allow to cool.
  2. Roughly chop the cooled raw almonds and place in a shallow bowl for rolling.
  3. In a large mixing bowl, stir together the nut butter, honey, flaxseed meal and maple syrup until blended. Stir in the cooled muesli and mix until blended.
  4. Using a 2 TB sized cookie scoop, form balls. Roll in hands to smooth out the balls and then roll each ball in the chopped almonds. 
  5. Return to the lined baking sheet. Chill for at least 30 minutes and keep fresh in the refrigerator for up to 10 days.
