Description

These Smashed Prune Snickers Bites have everything you love about a Snickers Bar but this homemade version is made with healthier ingredients instead. Naturally sweet California Prunes serve as the sweet and chewy base giving notes of caramel, layered with creamy peanut butter and topped in a blanket of melted dark chocolate, crushed peanuts and a sprinkle of sea salt flakes. These delicious bites are easy to make and offer a better-for-you alternative to the original.


Ingredients

12 California Prunes

1/4 cup peanut butter

1/2 cup dark chocolate chips

1 teaspoon coconut oil

2 tablespoons peanuts - roughly chopped

flaky sea salt - to taste


Instructions

Combine the chocolate and coconut oil in a microwave-safe bowl and heat in 20-second increments until the chocolate is melted. Be sure to stir in between each increment.

Evenly space the prunes on a parchment paper lined baking sheet. Top with a second sheet of parchment paper and use the bottom of a heavy cup to smash the prunes between the parchment sheets. Smash until the prune rounds are about 2" in diameter and about 1/4" thick.

Add 1 teaspoon of peanut butter to top of the smashed prunes. Pour or spoon the melted chocolate evenly over the top. Allow the chocolate to firm up slightly, then sprinkle with chopped peanuts and flaky sea salt.

Transfer the baking sheet to the fridge or freezer and allow to set up for at least 1 hour. Serve chilled as a satisfying snack, a pre-workout power bite or a delightful dessert.

Notes

Once the chocolate has firmed up in the fridge or freezer, the bites can be stacked and stored in an airtight container or freezer baggie. Keep stored in the refrigerator in an airtight container for up to 1 week or in the freezer for up to 2 months.

The bites will be firm with a snappy chocolate shell but the prune base will still be a bit chewy. You may want to let the bites sit at room temperature and soften up for a few minutes before biting if you prefer.
