    Smashed Prune Snickers Bites by Baking The Goods

    These Smashed Prune Snickers Bites have everything you love about a Snickers Bar but this homemade version is made with simple, healthier ingredients instead. Naturally sweet California Prunes serve as the sweet and chewy base giving notes of caramel, layered with creamy peanut butter and topped in a rich blanket of melted dark chocolate, crushed peanuts and a sprinkle of sea salt flakes. These delicious bites are easy to make and offer a better-for-you alternative to the original.

    Over on TikTok, Smashed Date Snickers have become a bit of a viral sensation and it's easy to see why. So we took inspiration from the popular treat and made our own version using vitamin-rich California Prunes in place of medjool dates. Similar to dates, prunes have a naturally sweet flavor with caramelly undertones. Making prunes the perfect caramel replacement in these Smashed Prune Snickers Bites.

    That's right, you're just 6 ingredients and a few minutes away from the bliss that is Smashed Prune Snickers Bites. These nutrient dense treats are an ideal snack to have on hand when hunger strikes. They are a great way to get the day going, pull you through the late afternoon slog, power you up before a demanding workout or even serve as a sweet ending to a long day.

    These Smashed Prune Snicker Bites are as easy as 1, 2, 3

    A simple and satisfying recipe is always a win. These Smashed Prune Snickers Bites are just that. Made with the craveable flavors of the classic candy bar, this sweet treat is full of healthy fats and wholesome ingredients. Better still, these Smashed Prune Snickers Bites are ready to rock in moments. The snackable bites assemble together in 3 simple steps. 

    First, melt the chocolate with the coconut oil.

    Melt the dark chocolate chips and coconut oil until smooth.

    Next, smash the California Prunes between parchment paper.

    Place the California Prunes between 2 sheets of parchment paper.

    Use a heavy bottom cup to smash the prunes.

    The smashed prunes should be about 2" in diameter.

    To finish, top the prunes peanut butter, followed by the melted chocolate, crunchy peanuts and flaky sea salt.

    Allow them to sit for a couple of minutes.

    We do love the healthy Snickers energy this recipe brings, balanced in salty sweetness with chewy and crunchy layers. However, this Smashed Prune Snickers Bites recipe can easily be customized, if you fancy. I am already dreaming of Smashed Prune Almond Snickers Bites.

    • Swap the peanut butter for your preferred nut or seed butter like almond butter, pistachio butter or even sunflower butter. Anything works here!
    • Switch up the chocolate by subbing in milk or white chocolate.
    • Go nuts with the nuts by exchanging the peanuts for almonds, pistachios, pecans or walnuts.

    Tips for making Prune Snickers Bites

    • Smash the prunes between 2 sheets of parchment paper to prevent sticking and keep the mess contained. 
    • Use a large flat bottomed glass or measuring cup to smoosh the prunes between the parchment paper.
    • Smash the prunes until they are about ¼ inch thick. The wider they spread, the more surface area you have to work with when you top the prunes. 
    • The chill is critical. You need that chocolate shell to set so you get the snappy candy bar effect.

    Storage Tips

    • Once the chocolate has firmed up in the fridge or freezer, the bites can be stacked and stored in an airtight container or freezer baggie.
    • Keep stored in the refrigerator in an airtight container for up to 1 week.
    • Alternatively, store in the freezer in an airtight container or freezer baggie for up to 2 months. The bites will be firm with a snappy chocolate shell but the prune base will still be a bit chewy. You may want to let the bites sit at room temperature and soften up for a few minutes before biting if you prefer.

    Description

    These Smashed Prune Snickers Bites have everything you love about a Snickers Bar but this homemade version is made with healthier ingredients instead. These delicious bites are easy to make and offer a better-for-you alternative to the original.


    Ingredients

    Scale

    12 California Prunes

    ¼ cup peanut butter

    ½ cup dark chocolate chips

    1 teaspoon coconut oil

    2 tablespoons peanuts - roughly chopped

    flaky sea salt - to taste


    Instructions

    Combine the chocolate and coconut oil in a microwave-safe bowl and heat in 20-second increments until the chocolate is melted. Be sure to stir in between each increment.

    Evenly space the prunes on a parchment paper lined baking sheet. Top with a second sheet of parchment paper and use the bottom of a heavy cup to smash the prunes between the parchment sheets. Smash until the prune rounds are about 2" in diameter and about ¼" thick.

    Add 1 teaspoon of peanut butter to top of the smashed prunes. Pour or spoon the melted chocolate evenly over the top. Allow the chocolate to firm up slightly, then sprinkle with chopped peanuts and flaky sea salt.

    Transfer the baking sheet to the fridge or freezer and allow to set up for at least 1 hour. Serve chilled as a satisfying snack, a pre-workout power bite or a delightful dessert.
