    This rustic and hearty Cottage Cheese Tzatziki Toast has all of the freshness of traditional Tzatziki sauce but with the protein power of cottage cheese and a sprinkle of feta cheese. Toasty slabs of sourdough are topped in a simple mix of creamy cottage cheese, zesty lemon, herby fresh dill, earthy garlic, olive oil, salt and pepper. It's topped with cucumber hunks, feta crumbles, even more dill and a good glug of olive oil. This easy cottage cheese toast recipe can eat like a meal or serve as a satisfying snack any time of day.

    As a vegetarian, I am always searching for clever ways to pack in extra grams of protein. Therefore, we eat a whole lot of beans, tofu and especially Real California Milk products. Leaning into the ease of cottage cheese is my go-to move for lightning fast lunches that keep me going throughout the afternoon. And when we are feeling snacky, my Chili Oil Cottage Cheese Dip, made with whipped cottage cheese for an ultra creamy texture, is a snacking hour win every time. 

    This Cottage Cheese Tzatziki Toast whips up in moments, subsequently, it has become a staple around here. No tedious cooking necessary, just pop some sturdy bread in the toaster, mix up the cottage cheese tzatziki, chop some cucumbers and pile it all up. Just like that, you're good to go and enjoying a fresh and creamy, protein powered toast in no time. This has become one of my favorite ways to enjoy savory toasts.

    You only need a handful of ingredients for Cottage Cheese Tzatziki Toasts.

    Simple ingredients you need to make Cottage Cheese Tzatziki Toast

    • Sourdough or any other preferred bread, you can even use gluten-free bread if that's your style.
    • Real California Milk Cottage Cheese replaces plain Greek yogurt to beef things up with extra protein.
    • Real California Milk Feta Cheese is crumbled over the top to add salty, creamy sprinkles of cheesy joy. 
    • Lemon juice and lemon zest add brightness while cementing that traditional tzatziki flavor.
    • Olive oil blends in with the cottage cheese mixture and gets drizzled over the top to add some silky fat and rich flavor.
    • English cucumber or Persian Cucumber is chopped and simply piled on top, saving time from the traditional tzatziki method of deseeding, grating and squeezing the moisture from the cucumber. 
    • Fresh Dill adds a grassy, fresh flavor. Dried dill works too. Sometimes I will even add a splash of dill pickle juice to the mix for an extra tangy kick. 
    • Garlic adds that earthy pungent flavor that really ups the flavor in the Cottage Cheese Tzatziki. 
    • Salt & black pepper round everything off with balance.

    Optional add-ons or swaps

    • Go yogurt. If you just aren't digging the cottage cheese version, a full fat Greek style Real California Milk yogurt is more traditional for tzatziki and can top a toast with ease as well.
    • Spice it up. Red pepper flakes, aleppo pepper or even a drizzle of hot honey or chili oil can really warm things up, if you want to turn up the heat.
    • Herbs the word. You can swap the herbs for whatever fresh herbs tickle your fancy. Parsley, mint or oregano all feel right at home in tzatziki. Even chives would play well here.
    • Cheese swap. I often use feta and cotija cheese interchangeably. They've got a similar salty bite and crumbly characteristics. So, they can step up and stand in for each other easily.
    • Veggie load. Add fresh tomatoes, pickled red onions or shallot slivers, arugula, kalamata olives or any other veggie that calls to you. You can't really go wrong here. During tomato season, I bury this toast with cherry tomatoes and cucumbers.
    • Sweeten it up. Add a drizzle of honey or a hot honey to add a kiss of sweetness.

    Minimal ingredients and a few simple steps makes this the ideal recipe for busy times. I love that I can get a full meal together quickly. In addition, this toast is jammed with healthy ingredients and craveable protein. A real win win situation, if you ask me.

    Quickly prep the ingredients

    • Chop the dill, garlic and cucumber. You can chop up that cucumber however you like. I did a rustic roll cut here.
    • Toast your sourdough slices to your desired toastiness levels.
    • Mix up the cottage cheese tzatziki by stirring the dill, lemon zest and lemon juice, garlic, olive oil and salt and pepper into the cottage cheese.

    Get all of the ingredients chopped and prepped. It's easy, just chop the herbs and garlic and crumble the feta.

    The assembly is fast. You simply top the toasted sourdough slices with the cottage cheese tzatziki mix, add the crumbled feta and cucumber. Then, drizzle on a little more olive oil. Finally, top with some more fresh dill, a sprinkle of salt and a punch of pepper and it's good to go!

    Description

    Ingredients

    • 2 thick cut slices of sourdough bread
    • 1 cup Persian or English cucumber, sliced
    • 1 cup Real California Milk cottage cheese
    • ⅓ cup Real California Milk Feta cheese
    • ½ of 1 medium lemon, zested and juiced
    • 2 tablespoons olive oil
    • 1 tablespoons fresh dill, chopped (or 1 teaspoon dried dill weed)
    • 1 garlic clove, minced
    • salt and pepper

    Instructions

    Start by toasting your bread to your desired levels of toastiness.

    While the bread toasts, combine the cottage cheese, lemon, 1 tablespoon olive oil, most of the dill (reserving some for garnish), the fresh lemon zest and juice, garlic, salt and pepper in a medium bowl. Stir together.

    Top the toasted bread with the cottage cheese tzatziki mix. Then sprinkle on the feta and top with cucumbers, remaining dill, a drizzle of olive oil and more salt and pepper to taste. Enjoy!

    Notes

    You can make the Cottage Cheese Tzatziki ahead and store in the refrigerator for 2-3 days. It will develop more flavor as it sits in the fridge.

    Alternatively top with other veggies like fresh tomatoes, olives or greens.
