    This single layer Avocado Chocolate Cake with Strawberries is a rich and elegant experience made more interesting by the unexpected luxury of ripe and buttery California Grown avocados. Smooth and creamy avocado replaces the butter and eggs in the dark chocolate cake, making for an ultra moist and decadent base.     Nobody wants a dry, crumbly cake. The ideal cake is moist and tender. And in the case of this Avocado Chocolate Cake it's a bit fudgy and decadent as all get out. Fresh, ripe California Avocados are the moist maker that gives this cake it's lavish depth of character.

    • California Avocados - large
    • avocado oil from California
    • bittersweet or dark baking chocolate, at least 60% cocoa
    • very hot coffee, strongly brewed
    • baking cocoa powder
    • all purpose flour
    • baking soda
    • baking powder
    • fine sea salt
    • avocado oil
    • granulated sugar
    • vanilla

    How to make this cake Avocado Chocolate Cake with Strawberries vegan or gluten free

    This cake is already egg free, butter and milk free and nearly vegan. But with a couple of small changes, it can be fully vegan. It can even go gluten free if that's your jam.

    • Use a vegan dark chocolate baking bar in place of a standard bittersweet baking bar that may contain milk fats.
    • Replace the honey in the Avocado Chocolate Frosting with maple syrup or agave syrup.
    • Use a cane sugar that is labeled as vegan.
    • Go gluten free by replacing the all purpose flour with your preferred cup for cup gluten free flour.

    Another spring, another farm tour with my freshest produce pals, California Grown. In the past we have tasted olive oil and wine in San Luis Obispo county, my backyard. We picked blueberries and harvested protea flowers from the jagged hills in Temecula Valley. We visited an organic farm that uses a a giant bug vacuum to safely remove pests and we witnessed the quick and deft skills of artichoke harvesters in Monterey county. This year, we visited an avocado farm and picked our own strawberries in Ventura county. Which led me to develop this beautiful and bountiful Avocado Chocolate Cake with Strawberries recipe.

    Prancer's Farm

    I am a sucker for a wholesome day spent visiting a family friendly farm stop. Prancer's Farm in Santa Paula, CA originated as a Christmas tree lot (hence the name) and evolved into an idyllic roadside family farm with U-pick strawberries, a farmers market and the sweetest crew of adorable farm animals in all of the land. The Robledo family welcomed us with open arms and empty berry baskets. We picked, we snacked, we explored and I even got to ride a gentle and majestic horse named Paco. This place is what farm dreams are made of. While picking the sweetest strawberries in this sweet setting, I was already scheming recipes while in the strawberry fields.

    Hot Tip - when picking strawberries, look for fruit that is vibrant on all sides with no white shoulders. Strawberries don't continue to ripen once picked, so they are best when picked at their peak ruby red moment.

    If it grows together, it goes together

    After these farm visits, avocados and strawberries were at the forefront of my mind. We left Ventura county with a basket full of strawberries and a bag of fresh picked avocados. The climate, time of year and terrain of the region is ideal for growing both strawberries and avocados. So naturally, I had to come up with some kind of dessert featuring this combo.

    Combining the new knowledge and delicious inspiration I picked up on this Ventura county agri-tour, I crafted the chocolate cake recipe of my dreams. The secret is, this Avocado Chocolate Cake with Strawberries allows the ingredients to shine their brightest lights.

    How do you add avocado to chocolate cake?

    Adding avocado to this chocolate cake could not be easier. Simply slice the avocado in half, remove the pit and squish the filling into a bowl. Then mash the avocado with a fork until it's smooth and chunk free. It should resemble a silky paste.

    How do you make the creamiest chocolate frosting without butter or sugar?

    Holy guacamole, this Avocado Chocolate Frosting will blow your mind. I still can't wrap my mind around the fact that there is no butter or added sugar in this smooth as butter frosting. In fact, it's just a blend of avocado, honey, melted dark chocolate, cocoa powder, vanilla and salt. It all blends together in a food processor in seconds. When I say it's life altering, I am putting it mildly. Then when you spread the Chocolate Avocado Frosting on top of the Avocado Chocolate Cake and throw some fresh strawberries on top, you may never go back to traditional chocolate buttercream again.

    Ingredients

    Avocado Chocolate Cake

    2 ounces bittersweet or dark baking chocolate - at least 60% cocoa, chopped

    1 cup very hot coffee, strongly brewed

    ¼ cup Dutch-process cocoa powder

    1 ¼ cup all purpose flour

    1 teaspoon baking soda

    1 teaspoon baking powder

    ½ teaspoon fine sea salt

    1 large ripe fresh California avocado, pitted and mashed until smooth - about ⅔ cup when mashed

    1 cup granulated sugar

    ¼ cup avocado oil from California

    1 teaspoon vanilla

    Avocado Chocolate Frosting

    1 large, ripe California avocado, about 1 cup when roughly chopped

    ½ cup honey from California

    2 ounces bittersweet or dark baking chocolate - at least 60% cocoa, chopped

    ¼ cup Dutch-process cocoa powder

    1 teaspoon vanilla

    ¼ teaspoon fine sea salt

    Topping

    3 cups California Grown strawberries


    Instructions

    Avocado Chocolate Cake

    Preheat oven to 350°F. Prepare an 8" round cake pan by greasing or spraying with baker's spray.

    Pour the piping hot coffee over the chopped chocolate in a heat-proof bowl. Allow it to sit for 3 minutes, then whisk until smooth. Whisk in the cocoa powder until fully mixed and set aside. 

    In a large mixing bowl, whisk together the flour, baking soda, baking powder and salt.

    In another bowl, smash the avocado until smooth and lump free. Whisk in the sugar, avocado oil and vanilla. Then whisk in the chocolate mix until smooth.

    Add the wet ingredients to the dry ingredients. Whisk until fully combined and smooth, careful to not over mix.

    Pour the batter into prepared baking pan. Bake in preheated oven for 30-35 minutes, until a toothpick inserted into center of cake comes out clean.

    Place the cake pan on a cooling rack and allow to cool for at least 20 minutes before removing it from the pan and placing it directly on a cooling rack to cool completely.

    Avocado Chocolate Frosting

    Melt the dark chocolate in a double boiler until smooth. Alternatively, melt in the microwave by heating for 30 seconds, then stirring the chocolate. Continue to heat in 10-15 second bursts, stirring between each until the chocolate is melted and smooth when stirred.

    Combine all of the ingredients in a food processor and blend until velvety smooth and creamy. The frosting should be thick, silky and slightly sturdy. 

    Assemble the Cake

    Prepare your strawberries however you'd like. If your strawberries are large, you may want to halve or quarter them. I like to slice some in half and leave some whole with the greens for a pretty presentation but you do you here. 

    Once the cake has cooled completely, transfer it to a pretty plate or cake stand. Dollop the Chocolate Avocado Frosting onto the center and use a small spatula or an offset spatula to spread it evenly towards the edges, using a swirling motion to create swoopy swirls. 

    Top and surround the cake with strawberries however you see fit. Then slice, serve and enjoy! 

    Notes

    Use large California grown avocados to maximize that buttery depth of flavor. 

    Store this Avocado Chocolate Cake with Strawberries in the refrigerator, wrapped in plastic wrap for 3-4 days. 

    Feel free to swap the strawberries for any seasonal fruit. Mixed berries, sliced apricots or even mandarin segments would be lovely here.
