
It seems like everyone has been hit by the flu train this month. It hits hard and it hits fast. It came at me quick last week and I was down for the count until I found this miraculous recipe for Lemony Soup with White Beans, Kale & Pasta by Flourishing Foodie. As soon as that soothing, lemony broth hit my scratchy throat, I felt a warm ray of sunshine shine creep through the dark rain cloud that'd been chasing me since that first deadly sneeze.
The mellow, fresh flavors and nutrient rich ingredients in this tried & true Lemony Soup with White Beans, Kale & Orzo heal from the inside out. With light and springy flavors, this soup will brighten even the darkest of winter colds and flus. I adapted the soup slightly from Flourishing Foodie's original recipe using ingredients that I had on hand. First, I upped the lemon juice to crank up that Vitamin C and because I am big on lemon. I subbed in orzo, which always pairs well with fresh lemon. In the interest of time, which I was running low on due to the flu, I used a can of white beans instead of dry and it still turned out creamy and rich. I also threw in an extra potato for added heartiness. I swapped the pecorino instead for parmesan to give the base a saltier, umami bite.
This Lemony Soup with White Beans, Kale & Orzo is my new go-to, cure-all, miraculous, healing bowl of sunshine. It's a solid, veggie based alternative to Chicken Noodle Soup as it has a similar healing nature. It's also a great transitional soup to bridge the schizophrenic weather gap between winter and spring.
