    I developed this Roasted Carrot & Herby Feta Galette as part of a collaboration project with dozens of other talented food bloggers. The springy theme centered around carrots with everyone sharing a recipe that put carrots center stage.

    Born from a failure to launch

    This Roasted Carrot & Herby Feta Galette recipe was born out of a failed recipe attempt that left me feeling deflated and defeated. I tried and tried to make a Carrot Cake Ginger Loaf but it kept coming out looking like a meatloaf.

    That sent me back to the drawing board and while scrolling my own site, I was inspired by this Feta Brined Chicken Skewers with Herby Feta Sauce. That Herby Feta Sauce has made all kinds of appearances in my kitchen beyond the original recipe. Then it hit me, what if I added this feta sauce to carrots? It turned out to be a brilliant move.

    4 distinct components that make this galette extra special

    All Butter Vodka Pie Dough

    The base of this Roasted Carrot & Herby Feta Galette is made with my go-to, tried and true All Butter Vodka Pie Dough. It's tender, flaky, crispy and shatteringly satisfying in every pie, galette and hand pie it encounters. In this galette recipe, I like to add 1 teaspoon of freshly ground black pepper to the all butter pie dough to give it an extra savory sensation. The warmth of the pepper peps up the buttery crust.

    Roasted Rainbow Carrots

    An array of small rainbow carrots bring a vibrant and springy vibe to this Roasted Carrot Galette. First, the small rainbow carrots are sliced in half lengthwise. Then they are drizzled in olive oil and salt and pepper. And roasted in the oven before layering on the galette. This allows the carrots to start to soften and release the natural sweetness that comes with roasting. It gives the carrots even more dimension.

    If you can't find small rainbow carrots, you can replace with regular sized carrots. Simply slice the larger carrots into 6" long strips about ½" thick.

    Herby Feta Sauce

    This mouth watering mix is a flavor booster that ups any recipe. It works especially well in this Roasted Carrot & Herby Feta Galette because the super savory elements play perfectly against the natural sweetness of the roasted carrots and the buttery depth of the pie crust.

    Made with a mix of feta, lemon, olive oil, parsley, dill, garlic and salt + pepper, this Herby Feta Sauce is a zesty flavor booster! It's a balanced mix of fresh, bright, grassy, earthy and zingy. AKA, everything I want in a savory recipe.

    Once the Roasted Carrot & Herby Feta Galette is baked, it's topped with more crumbles of feta, freshly snipped herbs and a sprinkle of nutty sesame seeds. This small touch adds a lively finish to the warm, savory Carrot Galette.

    Assembling the Roasted Carrot & Herby Feta Galette

    Because this is a rustic Carrot Galette, there is no need to be fussy about perfect edges or straight lines. Just be sure the dough is rolled out in a rectangular shape. The uneven edges give it more character and texture when folded over the carrots and baked.

    Those rainbow carrots look gorgeous roasted then baked together in a rainbow stripe pattern. They give this rustic savory galette tons of personality and a soft, earthy sweet flavor. Consider baking it for Easter or really any occasion where you are looking to impress with both looks and flavor!

    Description

    A sweet rainbow of carrots shine bright in this beautiful galette with a zesty, herby feta sauce baked in a warm peppered, all butter pie crust. Finished with salty feta crumbles, fresh herbs & crunchy sesame seeds.


    Ingredients

    Units

    ALL BUTTER VODKA PIE DOUGH

    • 1 disk all butter vodka pie dough bakingthegoods.com/roasted-carrot-herby-feta-galette
    • 1 teaspoon freshly ground pepper, optional

    HERBY FETA SAUCE

    • 1 cup fresh feta cheese, loosely crumbled
    • 1 whole medium sized lemon, freshly squeezed
    • ⅓ cup olive oil
    • ¼ cup fresh parsley, roughly chopped
    • 2 tablespoons fresh dill, roughly chopped
    • 1 clove garlic
    • 1 teaspoon black pepper

    ROASTED CARROTS

    • 2 lbs small rainbow carrots
    • 2 tablespoons olive oil
    • 1 teaspoon salt flakes
    • ½ teaspoon black pepper
    • 1 large egg
    • 2 tablespoons crumbled feta
    • 1 tablespoon fresh parsley, chopped
    • 1 tablespoons fresh dill, hopped
    • 1 tablespoon sesame seeds

    Instructions

    ALL BUTTER VODKA PIE DOUGH

    1. Prepare my recipe for All Butter Vodka Pie Dough and add 1 teaspoon of freshly ground black pepper to the dry ingredients before mixing.
    2. On a lightly floured surface, roll out the pie dough into a large rectangle ¼" thick, about 12"-14" by 8"-10" wide. Transfer to a parchment lined baking sheet and chill in the refrigerator while you prepare the other ingredients.

    ROASTED CARROTS

    1. Preheat oven to 400° F.
    2. Wash and slice the carrots in half or thirds lengthwise, depending on the thickness. They should be about ½" thick.
    3. Place the carrots on a baking sheet, drizzle with olive oil, sprinkle with salt and pepper and toss to coat.
    4. Bake for 10-12 minutes until the carrots just start to brown and soften. Allow to cool on the baking sheet.

    HERBY FETA SAUCE

    1. Combine garlic, lemon juice and olive oil together in a food processor. Pulse together until the garlic is sufficiently crushed. Add the feta cheese, herbs and black pepper, pulse until smooth.  Set aside.

    ASSEMBLE & BAKE

    1. Warm oven to 375° F. Remove the rolled galette dough from the fridge. Whisk the egg with about 1 teaspoon of water.
    2. Spread the herby feta sauce on top of the rolled galette dough in an even layer, leaving a 1 ½" - 2" border all the way around. Align the cooled, roasted carrots on top of the feta sauce at an angle, alternating directions, every other carrot with the skinny points towards the center. Add the remaining carrots in a second layer on top.
    3. Gently fold the galette dough overhang up and over the edges of the carrots. Brush the edges with a whisked egg.
    4. Bake on the lined baking sheet for 35-45 minutes (rotating the pan halfway through the bake time) until the pastry edges are golden and flaky.
    5. Allow to cool slightly, then top with crumbled feta, sesame seeds and fresh herbs. Slice into 8 wedges and serve.
