    My hubs dove head first into the Keto lifestyle a few months ago. His discipline and ability to continually eat a mostly meat based diet has been admirable to witness. I could never handle the Keto diet. I need loads of veggies and countless carbs to keep this bod powered up. I've done my best to be accommodating to his recent life choice, which has been a challenge for me in the kitchen as I am not a big meat eater. I honestly know next to nothing about cuts of meat or how to cook a steak. But he's been teaching me a thing or two in the kitchen, which has been an interesting role reversal for the two of us. I'm learning a lot and trying to offer a balance of Keto friendliness for him with a big fat side of carbs for me. While these Gluten Free Almond Flour Banana Oat Pancakes are likely a far from Keto, I'm hoping they are possibly healthier than your average pancake. But what do I know? I don't speak Keto or Paleo or any other diet that doesn't allow me my carbs.  For this Gluten Free Almond Flour Banana Oat Pancakes recipe, I swapped out regular old all purpose flour for a heartier, more protein packed almond flour. The banana adds a kiss of natural sweetness while binding the pancakes together. And I threw in some gluten free rolled oats to add sustenance and texture. To liven up these Gluten Free Almond Flour Banana Oat Pancakes, I added a bit of vanilla and a sprinkle of cinnamon. Then they've got some baking soda to help lift that almond flour up and give the pancakes a bit more body. My goal with these Gluten Free Almond Flour Banana Oat Pancakes was to sustain. I wanted to create a filling recipe that could fuel you through the morning and keep you feeling energized for hours. We've made these baby cakes a number of times now and I am continually surprised by my ability to make it all the way to lunch without a snack. Which, turns out, is especially hard when you are holed up at home for weeks on end due to a global pandemic. Who knew? These Gluten Free Almond Flour Banana Oat Pancakes truly pack a punch of protein power and help you hold your own for hours. Especially if you layer on some almond butter, a drizzle of naturally sweet Just Date Syrup and maybe indulge in a sprinkle of dark chocolate chips. I also enjoy a small stack of these Gluten Free Almond Flour Banana Oat Pancakes with a hunk of melty salted butter and a sprinkle of coconut. But I think my favorite combo has been peanut butter with a fresh pile of blueberries. You will surely need a big ol mug of coffee or some kind of milk product if you decide to top these with a nut butter. But, I promise it is a seriously scrumptious combo.  Dress them up however you like, these Gluten Free Almond Flour Banana Oat Pancakes go with almost anything. Times are weird and food is comfort. So allow yourself to stay in your PJs and make these healthier-ish Gluten Free Almond Flour Banana Oat Pancakes for breakfast, lunch or dinner. You will feel full of goodness without the guilt, well depending on how many chocolate chips you pile on top of your stack.

    These Gluten Free Almond Flour Banana Pancakes are a simple mix of mostly pantry staples. Well, if you get in the habit of having almond flour in you pantry as a staple, which I highly recommend. The rest is just gluten free rolled oats, baking soda, cinnamon, salt, vanilla, eggs, some kind of milk or milk like product and an old, rotting banana (which we all seem to have in our homes at all times).

    Description

    These Gluten Free Almond Flour Banana Oat Pancakes will fuel you through the morning with energy sustaining almond flour, GF oats, naturally sweet banana and a kiss of vanilla and cinnamon.  


    Ingredients

    Units
    • 1 ripe banana
    • 2 large eggs
    • ½ cup whole milk or almond milk
    • 1 teaspoon vanilla extract
    • 1 ¼ cups almond flour
    • ½ cup gluten free rolled oats
    • ½ teaspoon ground cinnamon
    • ¼ teaspoon baking soda
    • pinch fine sea salt
    • Butter, olive oil or coconut oil for greasing the pan

    Instructions

    1. In large bowl, mash the banana with a wooden spoon until smooth.
    2. Add the eggs the, milk or almond milk and vanilla to the mashed banana and whisk together until smooth and well combined. 
    3. In another bowl, combine the almond flour, oats, cinnamon, baking soda and a pinch of salt; whisk until well combined.
    4. Pour the dry ingredients in with the wet and whisk until smooth. 
    5. Lightly coat a large nonstick skillet with butter, olive oil or coconut oil and place over medium low heat. Pour about ¼ cup of batter onto the skillet. The batter is thick, so you may need to use the back of the measuring cup or a spatula to help encourage it to spread a bit more. Cook until bubbles start to appear on top and the edges look well cooked, it may take a few minutes.
    6. Flip the pancakes and cook until golden brown on underside, about 2-3 minutes. 
    7. Add a bit more more butter or oil and repeat with the remaining batter. 
    8. Top with whatever floats your boat! I like my Gluten Free Almond Flour Banana Oat Pancakes with almond butter, syrup and either blueberries or chocolate chips!

    Notes

    These Gluten Free Almond Flour Banana Oat Pancakes are a bit heftier than regular pancakes, so they may be thicker, take a bit longer to cook and brown more than regular pancakes.
