A trip to wine country inspired these cookies
In late October I had the opportunity to attend the Cherry Bombe Wine Country Jubilee in Calistoga, CA with my partners from California Grown. It goes without saying, this is the peak perfect time of year to visit California's wine country. The welcoming casual elegance of Calistoga planted the vision for these Pistachio Thumbprint Cookies.

The weekend featured talks and panels from an impressive and inspiring lineup of talented women in food and wine. Chefs, bakers, winemakers, authors, mothers, business owners, dreamers, doers and change makers shared their wisdom, histories and pioneering plans to improve the landscape of our food and food systems. Weaved throughout the weekend was a thick thread of empowerment and encouragement from women who’ve built up themselves and their communities with grit, grace and an abundant serving of support.
Over 98% of all US pistachios are grown in California
While driving through California on the way to Calistoga, I recalled a California Grown agritour I attended in the Central Valley. While on that trip I saw pistachio trees dripping with drupes for the first time. The pistachios were just about to be harvested and I was struck by the greenish-red clusters hanging gently from the trees. I've always enjoyed pistachios but seeing how they grow, deepened my appreciation for them.
Interestingly enough, pistachios weren’t commercially cultivated in the United States until the 1960’s. But they were an instant hit here and quickly became a common snack that we all know and love. The soft yet vibrant tone of pistachios encapsulates the warmth of holiday season in California. Making pistachios the ideal base for these thumbprint jam cookies.

No need for cookie cutters, these easy Pistachio Thumbprint Cookies are simply scooped then rolled in the coarsely chopped pistachio mix. Use a medium, 1 TB sized cookie scoop, about the size of a ping pong ball, to form cookies that are just the right size for thumbprints.
How to shape & fill thumbprint cookies
Thumbprint cookies have a classic look that's basically effortless to create. Once you've scooped the cookie dough balls and rolled them in the chopped pistachios, simply press the center of each cookie with your thumb to form a little well in the middle. Yes, it's that easy.
Then each thumbprint gets filled with about ½-3/4 teaspoon of your preferred jam or jams. That's it! So simple and swanky. The pistachio cookies form little green wreaths that wrap around the shiny jam gems in the center of each cookie.
Chill the shaped cookies to retain their shape as they bake

Pistachio Thumbprint Cookies

Description
California Grown Pistachios bring nutty warmth, crunchy texture and a soft green hue to these tender and buttery Pistachio Thumbprint Cookies. These easy drop cookies are encrusted in pistachios for extra crunchy exteriors. Then stamped with a thumbprint in the center, creating little wreaths that elegantly wrap around dollops of fruity jam.
Ingredients
½ cup granulated sugar
zest of 1 medium orange, about 1 tablespoon
1 ¾ cups raw California pistachios
2 cups all purpose flour
1 teaspoon baking powder
1 teaspoon fine sea salt
1 cup (2 sticks) unsalted butter, at room temperature
1 large egg, at room temperature
2 teaspoons vanilla extract
¾ cup California grown fruit jam
Instructions
Mixing the Pistachio Cookie Dough
Measure the sugar into a mixing bowl and add the orange zest. Use your fingers to squish the orange zest into the sugar, infusing the sugar with the orange essence.
Measure the flour into a large mixing bowl.
Place ¾ cup of the pistachios in a food processor and pulse until coarsely chopped. Transfer to a small bowl and set aside. Alternatively chop the pistachios by hand.
Add the remaining pistachios, along with 1 tablespoon of the measured flour and pulse until finely ground. The flour helps absorb the nut oils as the pistachios are crust, keeping it from turning to paste.
Add the finely ground pistachios to the flour along with the baking powder and salt. Whisk together.
In the bowl of an electric mixer fitted with the paddle attachment, cream butter and sugar on medium speed until light and fluffy, about 4-5 minutes.
Add egg and vanilla extract. Cream until smooth. Then, add the dry ingredients and mix on low until fully combined.
Shaping the Pistachio Thumbprint Cookies
Use a 1 tablespoon size cookie scoop to form cookie dough balls about the size of ping pong balls. Then roll each ball in the coarsely chopped pistachios, giving enough pressure as you roll so that the nuts stick to the exterior of the cookie dough balls.
Place cookie dough balls closely on a lined baking sheet. Gently press the centers with your thumb to form a well. Fill each well with about ½ - ¾ teaspoon of jam.
Baking the Pistachio Thumbprint Cookies
Preheat oven 350‚ºF. Place the sheet of cookies in the freezer or fridge while the oven preheats. Allow them to chill for at least 15-20 minutes. This will help the cookies hold their shape while baking.
Transfer the chilled cookies to lined baking sheets for baking, leaving at least 1.5" of space between each cookie. Bake for 16-18 minutes, rotating the pans halfway through. The cookies should feel firm and the just start to look golden.
Allow to cool on baking sheets. Then serve with something festive like a fancy cocktail, a seasonal hot tea or a glass of sparkly flavored water!
Notes
Make these cookies ahead by prepping the dough and shaping the cookies. Chill them on a lined baking sheet until frozen solid, then store the cookies in a freezer bag or airtight container, up to 3 months, until ready to bake. Bake from frozen and fill the wells with jam just before baking. *Note they may take a couple of additional minute to bake from frozen.
Store the baked cookies in an airtight container, either in the refrigerator or at room temperature, up to 1 week.

Fun idea! Hmm, I am not sure. You likely can't do a 1:1 swap for the ground pistachio (flour). However, a pistachio butter could be a great swap for a peanut butter based cookie like these Salted Peanut Butter Chocolate Chip Cookies or might even work well for this Tahini Pistachio White Chocolate Rose Skillet Cookie.
