    M&M Skillet Cookie

    This easy M&M Skillet Cookie is made with brown sugar for a soft center with crisp, golden edges, pebbled with Almond M&Ms for a crunchy texture.

    It's a little known fact that Easter candies taste better than the original versions of themselves. I'm looking at you REESE'S Peanut Butter Eggs. Since we are all in agreement about this, you should also know that said Easter candies taste even better when baked into a M&M Skillet Cookie.

    It’s true, I did extensive research on the subject - aka, ate this entire Skillet Cookie within a day. Is it just the pretty pastel colors of the Robin's Eggs and Easter M&Ms or is there something deeper going on that we don't know about?

    A Pastel Skillet Cookie

    I am all about that Easter Brunch. Serving up this Roasted Carrot Galette alongside an eggy Frittata is a springy delight. Fixing up a DIY Crepe Bar with all of the fixins is as good as brunch gets! But those tempting Easter candies are far too alluring to forget on Easter Sunday. Sure you could throw out a bowl of pastel M&Ms and call it good. But why would you when it only takes a few extra minutes to bake up one giant M&M Skillet Cookie studded with those pops of pastel?

    This M&M Skillet Cookie starts with a simple cookie base

    You only need a few ingredients for this simple skillet cookie recipe. I simplified my simple Brown Butter Chocolate Chip Cookie recipe to create the base of this skillet cookie. I swapped out the chocolate chips for Almond M&Ms. You can use any similar candy, regular M&Ms, Reese’s Pieces, even mini Cadbury Eggs. If you still want some chocolate chips, toss em on in! This is a real choose you own adventure recipe.

    9 basic ingredients

    1. all purpose flour
    2. fine sea salt salt
    3. baking soda
    4. baking powder
    5. unsalted butter
    6. brown sugar
    7. egg
    8. vanilla extract
    9. Almond M&Ms or any similar candy you prefer

    The M&M Skillet Cookie Base starts with basics that you already have in your baking larder - all purpose flour, baking soda, baking powder and salt.

    Brown sugar is a key element in soft and chewy cookies.

    Instead of scooping out cookies, the dough is pressed into a cast iron skillet

    So easy. Just press and bake until golden. What I love most about this M&M Skillet Cookie is the soft, squishy center & crisp golden edges. Throw in the crunchy Almond M&Ms and the textures are a dream. I'm not gonna lie, those cutie colored candies have got me swooning too.

    If you’re pinched for time to make a fancy Easter dessert or just looking for a way to make the most of those springtime candies, this M&M Skillet Cookie is for you my friend. And a little insider secret, save about ¼ cup of those Almond M&Ms to squish into the top of the fresh-from-the-oven skillet cookie, it’ll help keep them from cracking and the soft spring colors will pop like a field of wildflowers.

    Don't limit yourself to Easter, this recipe can be made with any seasonal candies you love

    Think Reece's Pieces for Halloween. Red & green M&Ms for Christmas or pink and red M&Ms at Valentine's Day. Or, use any evergreen candy option all throughout the year. You can even chop up candy bars and sprinkle them throughout. Think of this Skillet Cookie base is your oyster.

    Cream the butter and sugar together until it's light and fluffy like this.

    Once the cookie dough is mixed up, mix some M&M's right in there.

    Make sure to generously butter your cast iron skillet to keep the skillet cookie from sticking while baking.

    Add all of that dough to the buttered cast iron skillet and press in evenly before baking.

    After the M&M Skillet Cookie bakes, I like to press in a few more Almond M&Ms to the top while it's still warm and squishy. This keeps the color vibrant and the M&Ms wont get all cracky!

    Skillet Cookie with M&Ms
    If you're feeding a crowd and feeling casual, it's pretty great to grab some forks and collectively enjoy the M&M Skillet Cookie straight from the pan while it's still warm.

    Description

    This giant M&M Skillet Cookie is made with brown sugar for a soft center with crisp golden edges, pebbled with Almond M&Ms for a crunchy texture.


    Ingredients

    Units
    • 1 ½ cups all purpose flour
    • ½ teaspoon fine sea salt
    • ½ teaspoon baking soda
    • ½ teaspoon baking powder
    • ½ cup unsalted butter at room temperature, plus 1 TB for buttering skillet
    • ¾ cup brown sugar
    • 1 large egg, at room temperature
    • 1 teaspoons pure vanilla extract
    • 1 ¼ cup M&Ms, any version you like or any similar candy

    Instructions

    1. Preheat oven to 350°F. Using a pastry brush, coat a 12" cast iron skillet with 1 TB of butter. Set aside.
    2. In a medium bowl whisk together the flour, salt, baking soda and baking powder. Set aside.
    3. In a stand mixer with the paddle attachment, cream remaining ½ cup butter with the brown sugar. Mix on medium speed for 3-5 minutes, until light and fluffy. Be sure to scrape down the sides of the bowl periodically.
    4. Add the egg and vanilla and mix for another minute. Scrape down the sides of the bowl thoroughly.
    5. Add the dry mixture and mix on low until the flour is just incorporated.
    6. Stir in 1 cup of M&M's by hand, reserving ¼ cup.
    7. Transfer the cookie dough into the prepared cast iron skillet and gently press the dough evenly into the pan.
    8. Place the skillet in the oven and bake until cookie is golden brown and edges are set, about 20 minutes, rotating skillet halfway through baking.
    9. Allow to cool for about 5 minutes, then carefully press the remaining M&Ms into the top of the baked cookie. This helps prevent them from cracking and keeps the color more vibrant.
    10. Allow to cool 20-30 minutes before diving in. Slice into wedges and serve warm with your favorite ice cream.

    Notes

    This recipe can be easily adapted using any type of M&M or similar candy you prefer.
